Pizza Dough Recipe – Gluten Free

Ingredients

1.)  Gluten Free cornmeal for baking sheet

2.)  3/4 cup Gluten Free Flour

3.)  3/4 cup tapioca flour

4.)  Extra tapioca flour for rolling the pizza dough

5.)  1 teaspoon Agar-Agar powder

6.)  2 tablespoons dry buttermilk powder

7.)  1 teaspoon salt

8.)  2 teaspoons xantahan gum

9.)  1 package active dry yeast granules

10.) 1 teaspoon sugar

11.)  2 teaspoons olive oil

12.)  1 1/2 teaspoon cider vinegar

13.)  1/2 cup lukewarm water

Preparation

Preheat oven to 400 degrees

 Use a pizza stone or a baking sheet.  If using the baking sheet, place parchment paper on it and sprinkle cornmeal liberally around the surface. 

1.)   Compile the dry ingredient mixes into a large bowl and mix well. 

2.)  Add olive oil, water, sugar, & vinegar. 

3.)  Mix for 3-4 minutes.

4.)  Scrape the dough on to a clean surface and sprinkle with tapioca flour.

5.)  Work the tapioca flour into the dough so it can be shaped into a large ball.  Cut the dough in half to make two medium sized pizzas

6.)  Shape each dough piece into a circle.

7.)  Shape the dough with a rolling pin into the circles.  Roll thin for New York style or Thick for Chicago style.

8.)  Place one pizza crust on a pizza stone or baking sheet and bake for 5 minutes or until the dough is firm.  Repeat with 2nd pizza. 

9.)  Top the pizzas with your favorite gluten free toppings and bake an additional 7-10 minutes or until done.

Wheat Germ Smoothie

Ingredients

-1 ripe medium banana

-1 cup vanilla low-fat or nonfat yogurt

-1/4 cup fresh orange juice

-1/4 cup wheat germ

-1 cup cracked ice

-1 cup sliced fresh peaches or banana slices

Preparation:

1.Slice banana into chunks.

2.Add banana and yogurt in a blender with peaches, orange juice and wheat germ.

3.Add cracked ice.

4.Blend until smooth.

5.Serve instantly in tall glass.

6.Decorate with peach or banana slices and dust 2 tsp. wheat germ on top.
